White Truffle Dinner with Burgundy from the Cellar

For a handful of weeks each year in October and November, foragers in the Piedmont region of Italy and their highly trained dogs head out to secret hunting grounds in the countryside near Alba in search of the rarest of delicacies – white truffles.

Join us on Wednesday, November 5, at 6:30 pm for an extraordinary dining and drinking event at Forest Grill in Birmingham. We’re calling it Festa di Tartufo Bianco d’Alba con Vini Borgognoni. $350 per guest, all-inclusive, white truffles will be shaved over every dish.

White truffles have a profound earthiness and heady depth that pairs beautifully with the aromas, flavors and textures of properly aged Burgundy. Many have favorably compared Burgundy wines with the finest Barolo wines from Piedmont near where the truffles grow wild. For this dinner, we’ve selected 2003 Premier Cru white wines from Côte de Beaune and 1996 Premier and Grand Cru red wines from Côte de Nuits, both superb vintages.

Forest Grill’s Chef de Cuisine, Nick Janutol, has orchestrated a menu inspired by the regional cuisine of Piedmont but specifically adapted to our wine selection. These dishes were composed with flavors and textures meant to enhance the distinctive characteristics of the truffles. Before Forest Grill, Chef Nick studied at the Culinary Institute of America, and worked in the kitchens of Eleven Madison Park in New York and the renowned L2O in Chicago.
